Garlic Chicken Salad

This dish is one of my favourites in the summer, salads. However, salads are normally full of dressings that are clearly not healthy, so it is always recommended that you do it at home for a healthier result and cheaper :D.

To facilitate your life, to do this recipe you only need 10 minutes. To start to choose the base you like the most, I suggest quinoa and baby spinach then cook the chicken breast cut into pieces and mix it together with the base you chose. For the dressing, obviously, the key to the dish, mix together in the food processor a handful of walnuts, olive oil, lemon juice, parsley, basil and a clove of garlic (see the recipe at pinch of yum).



Salad Base:

  • 1 cup of quinoa
  • 1 handful of baby spinach
  • 2 cups cooked chicken
  • 2 cups tomatoes

Creamy Basil Dressing:

  • ½ cup walnuts
  • ¾ cup olive oil
  • ½ cup water
  • ½ cup basil
  • ½ cup parsley
  • 1 clove garlic
  • juice of two lemons
  • 1 teaspoon salt
