Tumeric Chickpeas with brown rice


You won’t probably believe, but you can make this recipe in 20 minutes, you just need to heat a pot and cook a shallot for 3-4 minutes, then stir some garlic and ginger, leave it for 1-2 minutes and add the coconut milk (or vegetable broth – less fat) along with turmeric and salt.   • 1 tablespoon olive oil
  • 1 medium shallot minced
  • 2 cloves garlic minced
  • 2 teaspoons minced ginger
  • 1 teaspoon turmeric powder
  • 1/4 teaspoon salt
  • 1 cup whole-fat coconut milk
  • 2 teaspoons muscovado sugar
  • 2 cups cooked chickpeas drained and rinsed if using canned
