Healthy Pancakes

Everyone loves pancakes right? Even me, I could eat them every day. Everyone is much more conscious about being healthy (and of course that our children have a healthy diet too) but we all know that sometimes is not easy for them to like some of the healthy options. Therefore, we can create nice recipes with healthy ingredients and they will never know the change. We just need to make some changes in the ingredients, for example, change the sugar to agave, and the flour to spelt flour or other whole option.

I will share my top 5 pancake recipes of the moment:

Spelt flour pancakes

  • 1 cup (150g) spelt flour
  • 1 tbsp agave nectar
  • 1 egg, lightly beaten
  • 3/4 cup (180ml) almond milk, unsweetened
  • 1 tbsp of coconut oil

Banana Oat Pancakes

  • 1 cup old fashioned rolled oats
  • 3 cups whole wheat flour
  • 1 1/2 tbsp ground flax seed
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 cups low-fat milk
  • 1 cup plain or vanilla yoghurt, preferably Greek style
  • 3 tablespoons melted butter or canola oil
  • 1/3 cup honey
  • 1 1/3 cup puréed ripe bananas, about 4 medium bananas
  • 2 eggs, lightly beaten

Quinoa Pancakes

  • 1 cup cooked quinoa
  • 3/4 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 tbsp course salt
  • 1 large egg, plus 1 large egg white
  • 1 tablespoon unsalted butter, melted, plus more for skillet
  • 1/4 cup low-fat milk
  • 2 tbsp pure maple syrup, plus more for serving
  • Fresh fruit or fruit preserves (optional) for serving

Blueberry Pancakes

  • 140 grams whole-wheat flour
  • 40 grams ground flaxmeal
  • 2 tbsp baking powder
  • 1 egg
  • 240 mL skim milk, plus more if necessary
  • 1/2 teaspoon salt
  • 1 tablespoon agave
  • 150 grams fresh berries

Ricotta Pancakes

  • 4 large eggs
  • 1 cup of whole-milk ricotta cheese
  • 1/4 cup whole milk
  • 1 tbsp vanilla extract
  • 1 tbsp lemon zest
  • 6 tbsp coconut flour
  • 1/2 tbsp baking soda
  • 1 tbsp coconut oil
